Weekly Menu {2/22–2/26}

This week I'm trying to cook through items we have without having to get too much from the store. I thought it would be kind of interesting to share what I've picked for the meal based on what I have in my fridge / freezer / pantry. Here’s what’s on the menu this week.

Monday—Ground Beef Tacos with some black olives, mini red peppers, and cilantro. I had half a pound of ground beef in the freezer, a couple of tortillas and the veggies in the fridge, and a can of black olives in the pantry.

Tuesday—Turkey Sandwiches. I have some turkey from the deli as well as provolone cheese, so we are going with plain old sandwiches and potato chips.

Wednesday—Dinner at our friend's house

ThursdayChipotle Lime Soup. I have a can of chipotle peppers in adobo sauce that inspired this choice. I also already have the celery, some mini red peppers I can use, as well as the chicken broth. I am planning to add some potatoes to this to make it a little more like a stew, and I may toss in some corn from the freezer. I will have to pick up some chicken breasts and an avocado, but otherwise I am pretty set.

Friday—Breakfast Baked Potato Bar. We have a bunch of potatoes to use up, and I'm going to make some scrambled eggs with cheese, breakfast sausages, and bacon to make it into more of a meal.
