Here's what's on the menu this week.

Monday—Nachos with ground beef, cheese, black beans, and black olives.

TuesdayLamb & Potato Stew with a few modifications. This is a bit more intricate of a recipe, but it looks so good, and we have a friend coming for dinner.

WednesdayChorizo Spinach Feta Frittata

Thursday—Salmon, Black Bean Tacos based loosely off this recipe.

FridaySmoky Corn Chowder with Shrimp using canned corn.
