What's on the Menu {1/6-1/12}

With the start of the new year, one of my weekly goals is to get back into the habit of meal planning. This helps me get all of our grocery shopping done at once for the week, saves me brain space of what to make as dinnertime rolls around, and overall saves us money in our grocery shopping budget and makes us use our eating out budget more intentionally. So, it’s totally worth it to me, even though I don’t always want to sit down and do it. :) In case it’s helpful to you, I thought I’d share what’s on our menu this week.

We’ll start the week off with a quick meal—Barbecue Chicken & Corn Pizza. I have some leftover rotisserie chicken and pizza sauce that I want to use up, and I try to keep a few cans of corn (and black beans) on hand for stuff like this. Maybe someday I’ll get better at making my own pizza dough, but for now, I just buy store-bought dough. Super simple to put together!

Tuesday night, it’s just the kids and I, so we’ll have a snacky dinner.

Wednesday night is busy for us, so I’ll make these Korean Beef Bowls, and I bought some dumplings (from the freezer section) to make with it.

On Thursday morning, I’ll get the Barbacoa into the slow cooker and serve it as tacos that night. Friday night we’ll eat out, and then I’ll use the leftover Barbacoa to make Shredded Beef Enchiladas on Saturday night.

Sunday is usually a combo of getting lunch out after church and then pulling something together with what’s leftover from the week...or frozen pizza, let’s be real.
